Ingredients:

400 gram tin of crushed pineapple

115 grams butter

1 cup sugar

450 grams sultanas or mixed fruit
Heat all together for about 15 mins, then add 1 tsp of baking soda.
Cool a little then add 2 beaten eggs
Fold in
- 1 cup of flour
- 1 cup of self raising flour
- 1 teaspoon of cinnamon
- 1 teaspoon of mixed spice
Use a 9 inch tin 150 degrees c for one hour and 15 mins.
Brandy Icing
- 170gms butter
- 450 grams icing sugar
- 3 tablespoons brandy
- 2 teaspoons vanilla
Wizz together in the blender.
