The weekend is nearly upon us, the perfect time to organise a fruit log ready for friends popping in. This particular recipe is so easy to freeze, just bring out when needed, I always make a big amount which makes about 3 logs, just wrap in glad wrap a few times and in it goes.
- 1/4 cup pistachio nuts
- 250gms cream cheese
- 50gms dried apricots finely chopped
- 3 spring onions finely chopped
- 1/4 cup sun dried tomatoes
- 3 tablespoons fresh parsley
I prefer the log quite textured, so cut up everything as fine as you like or as chunky.
Roast pistachio nuts till golden brown, cool then chop finely, then roll the log in the pistachio. Easy, really yummy and perfect for a friends and family get together.
