Ingredients:
- 3 carrots, medium
- 1 pinche chilli pepper flakes
- 1 bunch coriander
- 2 cloves garlic
- 1 inch ginger
- 1/4 cup shallots
- 1 x sweet potato, small
- 1 cups chicken stock
- 3 tbsp yellow curry paste
- 2 tablespoons turmeric
- 1 can coconut milk
- 1kg chicken fillets or thighs
Mix altogether and add to slow cooker, cook for 6 hours. Serve with rice or noodles.
